Mexican Enfrijoladas

Hi. As a Mexican living in the USA, sometimes I miss eating some real Mexican food and Taco Bell is not the best option. So after years of trying to find real Mexican food I found my own way to cook some real traditional Mexican dishes and today I decided to share with you one of them.



Enfrijoladas mexicanas… pronounced "N'-free-hol-laa-das"

You'll need:

4 cans of one of these
and this... and avocados
and two...
and crushed rosemary
and corn tortillas!!!
and maple syrup
and fresh or frozen cilantro... and a big piece of
roasted chicken...
Shred the chicken into a frying pan...
Add some canola oil and
then... some crushed rosemary
Fry it a little bit
add some Maple Syrup to taste...
Mix it very well and...
lower the flame a little... and then...
cover it...
...
mix it with chopped cilantro and add a spoonful of milk (yes, milk)...
add some salt, and green chilis... or guacamole mix... this just Guacamole... if you want.
Cut some red tomatoes...
prepare lemonade and the table...
Serve the chicken...
You are 35 minutes away from dinner...
in a medium size saucepan ...
add some minced onions with canola oil... and fry them at low temperature until the onions are golden... be careful to not overcook them...
turn off the flame and remove the pot. Then boil 1/2 cup of water in a separate container...
Then open 1 can of beans and use one of these machines to smash the beans easily...
repeat this step with the other 3 cans of beans...
RECYCLE !!!
Turn the flame up...
Mix... add some... hot...
water!!!
Lower the flame a little bit.. .
stir the mixture gently for 10 minutes to let it thicken...
Cover it for 5 minutes at low flame...
mmm smells good ...
transfer the beans to a flat pan and add three corn tortillas, one at a time...
cover and fold the tortillas until they are really hot....
serve folded in half ( 3 per plate)
OPTIONS...
Just with cheese...queso fresco or queso blanco or Parmesan...
